As European financial dairy markets continue to grow, a question that continues to arise is how to hedge cheese? With no listed derivative, and given the sheer number of varieties (reportedly more than 400 just in France alone) as well as the volume of milk allocated to the product (more than one-third of total EU raw milk), there is a clear need for a mechanism to manage price risk.
